Vineyards
Implanted in 1990 on sandy loam soil, with the presence of deep stones. The vineyards are located at 1700 masl, This location gives a great temperature range between day and night which helps to develop aromatic components, typical of Torrontés from Cafayate, aromas of white flowers, citric and white fruits, that make delicate and aromatic wines.
Vinification Process
The grapes are harvested when they have the perfect balance between sugar and acidity desired for this type of natural sweet wines (approx 190-200 gr / liter). In the cellar temperature is lowered to 6 – 8 ºC, to get an optimal clean must to ferment. This fermentation takes about 30 days, and is done at very low temperatures to preserve aromas (8 – 10 °C) once the selected yeast have consumed about 110 grams / liter of sugar, the tank valves are closed, to reach about 5,5 kg of pressure. After this fermentation is stopped by lowering the temperature to (-3 ºC), leaving a remaining natural sugar of approximately 60 grams / liter. This gives our wine a unique smoothiness. Finally, the sparkling wine is centrifuged to remove the remaining dead yeast after this it is filtered to give it its final clarity. The bottling is done at 0 ºC.
