Vineyards
The grapes grow in selected vineyards of high winemaking quality. These vineyards are irrigated by flooding system with melting waters from the Andes. The type of soil is ideal for grape growing, poor in organic matter with good drainage. The vineyards are approximately at 950 meters above sea level. It´s an area with excellent temperature range – hot days and cool nights-/ and high sun exposure.
Vinification Process
Manual harvest. Fermenting and post-fermenting maceration. During this last process, we make daily pump-overs to maintain the contact of the solid and liquid matter, and thus extract the greatest amount of tannins and aromas. This process lasts, approximately, 15 days with controlled temperatures that oscillate around 28 ºC. Natural malolactic fermentation. Subtle wood contact, preserving the varietal typicity.
Tasting Notes
Attractive purple red of high intensity with cherry trims .Elegant nose of ripe black fruits, black pepper and red peppers. Alcohol, acidity and tannins are in balance, and allow to express the typical fruitiness of the vine. A well-structured wine, broad and firm in its final taste.
Service temperature: 16º C to 18 ºC
