The grapes grow in selected vineyards of high winemaking quality. These vineyards are irrigated by flooding system with melting waters from the Andes. The vineyards are located approximately at 1200 meters above sea level. It´s an area with excellent temperature range – hot days and cool nights-/ and with high sun exposure. Unique characteristics from this wine region.
Manual harvest. Selection of clusters. After de-stemming, the grapes are taken to a pneumatic press, where at low pressures, we obtain the first must . After this, the must is sent to a stainless steel tank under low temperature where the sediments will decant by themselves. The clean must fermentation is carried out in stainless steel during 20 days at 16 to 18 ºC with selected yeasts. Once the alcoholic fermentation is finished, the wine is racked and only left in contact with its fine lees for three months. During this period of time the wine acquires a round mouth-feel and subtle and elegant fruity aromas.
Bright yellow, with greenish tones. Clean nose with marked citrus, white fruit and floral aromas. An elegant white wine true to the varietal, with balanced and fresh acidity. The finish is pleasant and persistent with a fruity aftertaste.
